On September 30, 1999 the Congreso Bacardi de la Salsa let loose at the Sevilla restaurant with an all-out dance filled evening accompanied by fine Spanish style food. The Denver Businessman and the creator, owner, and manager of Sevilla, Bart Delorenzo, was the Master of Ceremonies and presided over a high pulsed dance filled night that included performances by local dance schools and the Bacardi Congress Dancers, and a dance contest open to the public. Five couples were selected from the crowd of dancers by Eli Ilizario, (the creator of the Congreso Mundial de la Salsa now known as Congreso Bacardi) and the Congreso Bacardi Dancers.

The Sevilla restaurant, located at the Ice House on 1801 Wynkoop Street in Denver Colorado, is decorated like a pre-historic cave complete with stalactites (or were they stalagmites?), cave paintings, and real bone imbedded in the faux cave walls. The bars and tables are made of metal plates and give the place an industrial edge that somehow does not clash with the cave atmosphere.
